The length of aging varies greatly as function of various factors: size of primal cut, type of primal cut, and grade. In the case of Dry-age, the amount of humidity, moisture, and light also affect the aging process. Our Aged Natural Beef is Dry-Aged for 14-21 days.
Our Dry-Aged Natural Beef products are Pasture raised on grass and minimally finished on Grain/Corn.
Due to the perishable nature of our shipments, we do not ship products over the weekend. Our first day to ship out an order is Monday which would then travel via Overnight Delivery service for delivery on Tuesday.

We recommend scheduling delivery when someone will be present to receive the delivery of our aged natural beef. However, we have instructed UPS to release packages whenever safe to do so.
When you order online you can specify a later ship date during checkout. You may also request this service if you place your order by telephone with our customer service representatives. Please note, during the busy Holiday shipping season, we do release some orders a few days prior to the requested ship date, and therefore you may receive your order as early as the requested ship date, if you have chosen Standard shipping.
All orders are shipped via Federal Express to arrive within 2-3 business days from the date you select when you place your order. Our standard shipping days are Monday-Wednesday. Orders placed after 11:00am EST on Wednesday will ship the following Monday unless a Next day delivery option is chosen. Once orders leave our warehouse you will receive your order within 2 business days. Rest assured, we add the appropriate amount of dry ice in each package so that it will keep the products frozen until they arrive to you.
Place the Styrofoam cooler outside or in a well-ventilated container and it will evaporate.
Dry Ice is frozen carbon dioxide. Unlike most solids, it does not melt into a liquid, but instead changes directly into a gas. This process is called sublimation. If there is no dry ice visible in the cooler, feel the product. If the product is cool, place it in the freezer or follow instructions for preparation. If the product is thawed, contact customer service. We may arrange to have the package picked up by Federal Express.
Orders are packed in styrofoam coolers or insulated bags with dry ice or gel packs. Please do not touch the dry ice directly, it is caustic and can burn the skin.

Products are generally good for 9-12 months if kept wrapped in an air tight container/bag. The products MUST remain frozen.
Yes… you must take delivery within the 12 months of your purchase. Thereafter the balance will be donated under your name to a local food bank and you will receive a charitable deduction report for your taxes.
